Much-beloved eastern eatery Georgetown Thai Gourmet has a new leader at its helm.
Shailendra Vashishtha and his team have been running the show at the local restaurant since late last year when the previous owner moved away.
He said he saw the “tremendous potential” of Georgetown, especially due to promised growth fuelled by developments like Vision Georgetown.
“And they (Georgetown Thai Gourmet) have a loyal customer base - the reviews say it all. So it looked like a winner to us.”
Vashishtha has big plans in mind to make the space his own while also carrying on the legacy of the old management.
Georgetown Thai Gourmet has been in business since 2006 and originally started downtown. The previous owners moved to the current location at 232A Guelph St. just before the pandemic began.
“They planned to open for breakfast, lunch buffets and dinner buffets. However because of COVID, could not do it,” Vashihstha said. “So now we not only are giving party spaces for private events, but since January we started having lunch as well on weekdays.”
“We have been surprisingly happy with the kind of response that we have received so far,” he added.
Vashishtha was careful to say that almost nothing was taken off the menu when his tenure began. The only exception is a pork-based dish to make it halal.
Other than that, he says he has only added to the menu, such as new spring rolls and potentially more appetizers in the near future.
The old tried and true favourites like peanut curry, mango salad and, the most popular recipe, pad Thai, are all on the menu.
Thirsty customers can expect a remixed bar menu as the staff of Georgetown Thai Gourmet will be redesigning it.
“We're adding some new cocktails, some new mocktails and some new drinks,” Vashishtha said.
The owner hopes to one day grow the business into a franchise. He's eyeing a number of possible locations, such as Acton, Guelph, Oakville, Burlington, Milton and Rockwood.
